Egg & Oatmeal "Bread"

Being the huge foodie that I am, I'm always looking for healthier alternatives to things such as rice, bread and pasta. My newly discovered recipe is my "egg & oatmeal bread." If you follow me on Instagram or Snapchat you probably saw my pictures while I was making it. I know it didn't look delicous but it actually tasted good.

Now, I'm not saying it tasted as good as a croqueta from Pinecrest Bakery but it was good and it got the job done. I LOVE LOVE LOVE bread - it's my weakness but honestly this "bread" thing can be used in the same ways.

I first learned about it from the family I stayed with in Singapore so I decided to look up a recipe and make one of my own.

WHAT YOU'LL NEED: (serves two)

1 Spatula

1 Tablespoon

1 Small whisk (or you can just use the spoon)

1 Non-stick pan (easier than having to put Pam or oil on a regular one)

1 Small bowl

INGREDIENTS:

2 Tablespoons of dry Oatmeal

2 Tablespoons of Flaxseed (optional)

6 Eggs

*Feel free to add whatever spices you want such as salt, pepper, cayenne pepper etc. OR if you want to make a sweet one you can use vanilla extract, sugar and cinnamon*

STEPS:

In a small bowl, mix the eggs, oatmeal and flaxseed. Out of the 6 eggs, I kept 2 egg yolks because I didn't want to throw them all away but you can use all the yolk or just use egg whites.

Turn on the stove to medium heat and let it warm up.

Whisk until the oatmeal has softened and the egg has mixed with the rest of the ingredients.

Add the spices of your choice.

Pour the mixture into the pan.

Let it sit for 4-5 minutes before flipping it over (my pan was big so I cut the "bread" down the middle with a spatula so it would be easier to flip over).

And you're DONE! I put avocado, red onions, lime and goat cheese on top of mine but you can also put ham and cheese, peanut butter with bananas, cream cheese, butter, or really anything that you would put on an actual piece of bread.

This is a healthy & guilt-free alternative to bread that can be made in less than ten minutes!
